King trumpet mushrooms

Minced ginger

Method:
Wash and scald snow peas. Put aside to cool down.
Slice the king trumpet mushrooms and cut the red peppers into pieces. Chop gingers.
Heat oil in wok and stir fry chopped ginger and spring onions before adding the king trumpet mushrooms. Turn to slow heat and keep frying until they are soft.
Add snow peas and red peppers to wok and stir fry. Season with salt, sugar and soya sauce, and serve.
