Ingredients:
medium sized orange potato
1 medium sized purple potato
1 small cucumber diced
½ cup diced celery,
¼ cup dried cranberries
½ tsp basil or rosemary ( if available, use fresh herbs, chopped)
Salad dressing
Ingredients:
1 tsp lemon juice
2 tsp Dijon mustard,
½ cup olive oil
Dash salt, black pepper, turmeric
Method:

Boil sweet and purple potato until tender; cut in cubes.

Toss sweet potato, celery, cumber, season with dash of salt, black pepper, basil.

Mix salad dressing ingredients, when ready to serve, pour the dressing over the salad.
