Wash potatoes and cut into small pieces keeping the skin.
Peel tomatoes and cut into pieces. Slice onion and mushrooms.
Rinse fish tail. Wipe dry and marinate with some salt.
Boil water and add onion, potatoes and 1 slice of ginger. Boil for 5 minutes
In the meantime, heat oil in a frying pan and add one slice of ginger and fish tail. Brown both sides of fish tail lightly. Remove fish and drain under cold water to wash away oil.
Add fish tail to boiling soup and boil in medium heat for 15 minutes. Add tomatoes and mushrooms and boil for another 10 minutes. Add salt as seasoning. Fish tail and vegetables can be served as a dish; sprinkle with chopped spring onion.
