INGREDIENTS FOR THE FILLING
3 apples, peeled, cored, and sliced
1/3 cup (60 g) brown sugar
Juice of 1/2 lemon
1 tsp ground cinnamon
1 tsp. pure vanilla extract (optional)
INGREDIENTS FOR THE CRUST:
1 1/2 cup (160 g) all-purpose flour
1/4 cup (50 g) brown sugar
1/2 tsp. kosher salt
1 tsp baking powder
1/4 tsp. ground cinnamon
120 g butter, in cubes
2 tbsp. granulated sugar
2 tbsp. butter, cut into small cubes
Apricot preserves (diluted with lemon juice and water)
Methods:

Preheat oven to 190 C°.

In a large bowl, mix flour, baking powder, sugar, salt, and cinnamon. Rub in cold butter until dough forms. Put dough in freezer for an hour.

Slice apples and then in a bowl, toss the apples, brown sugar, lemon juice, cinnamon, vanilla, and salt together.

Take dough out from freezer and press the mixture into two 8” square tins or one 11”tin with a removable bottom, pressing until dough is smooth.

Arrange the apples over crust, sprinkle with granulated sugar and dot top with butter. Bake until crust is golden brown and apples are tender, this should take about 1 hour.
